MEAT FREE TOFU TACOS
INGREDIENTSOne package firm organic tofu pressed well and diced small
1 Tbs olive oil
1.5 Tbs chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon JF Universal or Spicy Salt
1/2 teaspoon fresh cracked black pepper
2 Tbs corn starch
PROCESSCombine all ingredients (except tofu and oil) in a large mixing bowl and stir to combine well. Add tofu and toss to coat. Using a large frying pan (I used nonstick to help crisp it) heat olive oil on medium/high heat. Add tofu and sauté stirring often but allowing it to crisp. Sauté until crispy so that the texture almost emulates crumbled meat.
Serve immediately with hot tortillas and your favorite toppings as tacos or over greens as a taco salad.
