Need an idea for leftovers and want brunch? Today I'm taking my Thanksgiving stuffing and making guilt-free, grain-free, gluten-free and dairy-free stuffing waffles.
Preheat waffle iron. Scramble 2 eggs into a bowl. Take leftover stuffing and add into bowl with scrambled eggs. Mix thoroughly. Once waffle iron is hot, add mixture and let cook for about 2 1/2 minutes until golden brown and crisp. Drizzle with olive oil as a savory syrup alternative. Garnish with avocado slices and leftover cranberries to serve.
