This is my favorite option when I'm not fasting and want a spicy sweet breakfast. It also makes a great WFH or take-to-work lunch. Serves 1.
1 cup plain coconut yogurt (I like Cocojune
¼ fresh mango, finely diced
½ organic avocado, finely diced
¼ organic jalapeño, deseeded and sliced thin on the mandolin
Handful of cilantro, chopped
Fresh cracked black pepper, to taste
Generous pinch of JF Spicy Salt
Olive oil, to taste
Spoon the yogurt into a bowl. Layer in the mango, avocado, jalapeño, cilantro, black pepper, and JF Spicy Salt
. Top with a generous drizzle of olive oil and enjoy!
