Shiitake Salami Pasta Salad

SHIITAKE SALAMI PASTA SALAD

The ultimate grain-free, dairy-free, gluten-free, meat-free, totally clean pasta salad - better than the grocery store version. Try not to eat the entire thing immediately, it’s even better after sitting in the fridge overnight. Serves 4 as a side. 

INGREDIENTS:

1 (8oz) box grain-free penne, cooked according to package, drained, and rinsed (I like Jovial
JF Shiitake Salami
3 Tbsp roasted red peppers, chopped
3 Tbsp chives, chopped 
½ cup jicama, peeled and chopped 
¼ cup tomatoes, chopped
¼ cup red onion, chopped
¼ cup black olives, sliced
¼ cup pepperoncinis, chopped
½ cup artichoke hearts, chopped (I like Native Forest)
Fresh cracked black pepper, to taste
JF Spicy Salt, to taste
JF Simple Mustard Vinaigrette, to taste

 

Shiitake Salami:
Olive oil
1 package shiitake mushrooms
¼ tsp thyme
¼ tsp fennel 
¼ tsp basil
¼ tsp parsley 
¼ tsp crushed red pepper flakes 
¼ tsp garlic powder 
¼ tsp onion powder (optional)
1 Tbsp nutritional yeast 
JF Spicy Salt 

PROCESS:

Shiitake Salami
Preheat the oven to 400°. In a large pan over medium-high heat, begin to warm the olive oil. Add your mushrooms and allow them to cook down and become tender. Season with thyme, fennel, basil, parsley, red pepper flakes, garlic powder, onion powder, nutritional yeast, and JF Spicy Salt, recreating that “salami” flavor profile. Sauté until slightly crisp, then roast in your preheated oven for 15 minutes.


Pasta Salad
In a large bowl, using the grain-free penne as your base, begin to build your pasta salad. Layer in the Shiitake Salami, roasted red peppers, chives, jicama, tomatoes, red onion, black olives, pepperoncinis, and artichoke hearts. Season with JF Spicy Salt and black pepper to taste. Dress in my JF Simple Mustard Vinaigrette, toss well to coat, and enjoy!
