MOM DIDN'T GET TO EAT TODAY FRIED RICE

This is one of my go-to quick meals when I haven't had time to eat all day. This works best with leftover rice, not fresh rice. Serves 1. 

INGREDIENTS:

1 Tbsp oil of your choice
2-3 C any style leftover rice
2-3 eggs
1/4 white onion, finely diced 
1 green onion, chopped fine
Pinch of JF Salt of your choice
1tsp -1 Tbsp tamari or soy sauce

PROCESS:

Heat the oil in a medium frying pan. Add white onion and sauté on medium until fragrant and translucent. Add rice and break up into onion. Once warmed through add egg and combine. Cook on low until cooked through. Add tamari or soy. Add JF Salt and green onion. Mix well. Serve with hot sauce of your choice. Try to sit down and not eat standing in the kitchen.
