SIMPLE LIME SUMMER SLAW


This fresh, crispy salad is an amazing addition under my garlic shrimp or with tacos as a side. Serves 4.

INGREDIENTS:

1/2 small (2 lb) green cabbage, cored and very thinly sliced (about 4 C)
1/2 medium white onion, peeled and very thinly sliced (about 1/2 C)
1/2 red bell pepper, cut into thin strips
2 carrots, peeled and shredded (about 1/2 C)
1 small jalapeño, ribs and seeds removed, minced
Juice of 1 fresh lime
3 Tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp honey
1 tsp JF Universal Salt
Fresh cracked black pepper, to taste

PROCESS:

In a large bowl, toss together cabbage, onion, carrot and jalapeño. For the vinaigrette, combine the lime juice, apple cider vinegar, Dijon mustard, honey and JF Universal Salt in a small bowl.  Whisk together. Pour the vinaigrette over the vegetables and toss to combine. Season to taste with more JF Universal Salt and fresh cracked black pepper. Cover and refrigerate for one hour before serving.
