Mexican Lime Summer Slaw

Perfect Year long side salad.
This fresh cripsy salad is also amazing under my garlic shrimp or with tacos as a side or topping with pickled onions.

1/2 small (2 pound) green cabbage, cored and very thinly sliced (about 4 cups)
1/2 medium white onion, peeled and very thinly sliced (about 1/2 cup)
1/2 red bell pepper cut into very thin strips
2 carrots, peeled and shredded (about 1/2 cup)
1 small jalapeño, ribs and seeds removed, minced (optional)
Juice of 1 fresh lime
3 tablespoons apple cider vinegar
1 teaspoon dijion mustard
1 teaspoon honey
1 teaspoon JF Universal Salt

In a large bowl, toss together cabbage, onion, carrot and jalapeño. For the vinaigrette, combine vinegar and JF salt in a small bowl.  Pour vinaigrette over the vegetables and toss to combine. Season to taste with more JF salt and pepper. Cover and refrigerate for one hour before serving.
