I was starving after a big shoot day so made the easiest dinner that turned out so delicious. Totally satisfying and completely on the program. Serves 1.
Organic olive oil spray
2 soy-free eggs, beaten
½ cup grass fed ground beef, leftover from my JF Beef Bowls
½ cup organic shiitake mushrooms, sautéed
1 Tbsp chives, chopped
JF Spicy Salt, to taste
In a large pan begin to warm the oil. Add both eggs and cook partially, they should still be semi-loose. Add the ground beef, incorporate throughout and finish cooking. Remove from heat.
In a separate pan warm olive oil over medium heat. Add the shiitake mushrooms and sauté down until golden brown. Plate over your eggs and top with chives, JF Spicy Salt, and a drizzle of olive oil.
