Keto Chicken Pasta

KETO CHICKEN PASTA

This Keto diet (thanks Keto Kev) is making me crave my favorite foods more than usual. One can only eat so much salami and cheese. This Sunday I was in the mood for pasta and spotted organic ground chicken breast at Whole Foods as I was rushing through so grabbed it not really knowing what I was going to do with it. I originally was thinking meatballs but when I opened the package the chicken was a bit smoother in consistency and I was concerned it wouldn’t hold up without the bread crumbs so I tried this and it worked.
Serves 2 

 

INGREDIENTS

 I package organic Bell and Evans ground chicken breast
1 small shallot, chopped fine
1/2 white onion, chopped fine
1 clove garlic, chopped fine
1 tablespoon garlic olive oil (can also sub with plain olive oil)
1 teaspoon JF Spicy Salt
1/2 teaspoon cracked black pepper
1/4 teaspoon dried red pepper 
1/2 teaspoon dried oregano
1 cup tomato sauce
shredded mozzarella cheese 
shredded Parmesan cheese 
chopped Italian parsley
 

PROCESS

In a nonstick pan heat the olive oil to medium and add the shallot, garlic and onion
Sauté until translucent, about 2 minutes
Add chicken breast, salt, pepper, oregano and chili pepper and cook through until crumbly. I chop down the meat as I cook it with a wooden spatula so the bits are small. Make sure to wash your spatula or use a different spatula once the meat is cooked. You don’t want the raw meat on your spatula mixing with your cooked meat! 
It’s this easy. Once cooked you can transfer to a baking dish sprinkle with sauce and cheese and broil until bubbly. It’s sort of like a chopped chicken Parm but the bits eat more like a pasta.  Sprinkle with more parmesan cheese and fresh parsley before serving
I’m doubling this next time it was gone fast. Serve with my roasted zucchini
