"I Wish I Was in Greece" Cauliflower

"I WISH I WAS IN GREECE" CAULIFLOWER

This simple cauliflower and dipping sauce will transport you to the Mediterranean. Serves 4.

INGREDIENTS

CAULIFLOWER
1 head of cauliflower, roughly chopped
1 Tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp thyme
1/2 tsp oregano
JF Spicy Salt
Pinch of cobanero chili (can be subbed with generous pinch of crushed red chili pepper flakes)

 

TZATZIKI SAUCE
1 1/2 C 2% Greek yogurt
1 Tbsp fresh dill, chopped
3 cloves of garlic, minced
1/2 tsp JF Spicy Salt
Juice of 1 lemon

 

PROCESS

Place chopped cauliflower in a large bowl and toss with olive oil, garlic powder, onion powder, thyme, oregano, JF Spicy Salt, and pinch of cobanero chili.
Cook in the convection oven at 425º for 25 minutes.
In a large bowl, mix together the Greek yogurt, fresh chopped dill, minced garlic, JF Spicy Salt, and lemon juice.
Serve the roasted cauliflower with the tzatziki sauce as a side for your favorite protein. Store in your refrigerator for up to a week.
