"Diamond" Tuna


This one is for Dr. Jason Diamond. I figure if I can name hoops after my friends, I can name my recipes after them too! Serves 1 with leftovers. 


cans low-sodium tuna, drained and flaked very fine
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
1 Tbsp roasted red peppers, chopped
½ jalapeño, deseeded and diced
1 cup white beans
1 Tbsp cilantro, coarsely chopped


In a large bowl, using the flaked tuna as your base, begin working in the JF Simple Mustard Vinaigrette and season with JF Spicy Salt. Adjust to taste. Add your chopped roasted red peppers, jalapeño, white beans, and cilantro. Enjoy!
