Clean Out The Fridge Warm Quinoa Slaw

CLEAN OUT THE FRIDGE WARM QUINOA SLAW

We all have veggies that are about to go in the fridge. So clean it out and make something delicious with them. 

INGREDIENTS

1 cup dry quinoa (yields approximately 3 cups cooked) 
Your favorite vinaigrette (eyeball it)
2 cups roasted vegetables of your choice. I suggest roasting whatever is about to go in the fridge (I used cubed sweet potatoes) 
1/2 red onion, finely diced 
1/2 of a red, orange or yellow pepper,  finely diced (can also use a fresh diced jalapeño) 
6-8 piquillo peppers, finely diced. If you don’t have you can use any pickled chili’s you might have on hand. Even a touch of hot sauce will work.
1-2 cups finely shredded green cabbage (use a mandolin, your cabbage must be paper thin for the right crunch)
Handful of chopped cilantro or whatever fresh green herbs you have on hand
JF Spicy or Universal Salt to taste.
Fresh cracked black pepper to taste.

 

PROCESS

Once quinoa is cooked toss in the vinaigrette while warm and combine well. Add your warm roasted veggies, onion, and peppers and stir well to combine. Add cabbage and combine and season to taste. 
That’s it. You have a killer side or salad and you cleaned out your fridge.
