Chicken Broccoli Bake

CHICKEN BROCCOLI BAKE

I think hot sauce is the key to this bake. It is a lot of chicken so feel free to wrap it or serve over a bed of a simple salad or grain.  

INGREDIENTS

3 organic chicken breast, poached, cooled and shredded 
1 head organic broccoli, blanched
1 jalapeño, deseeded and diced
½ red onion, finely diced
4oz mascarpone cheese (sub plant-based cheese)
1 tsp garlic powder
1 tsp JF Spicy Salt
½ tsp cracked black pepper
1 cup sharp cheddar cheese, shredded (sub plant-based cheese)
½ cup parmesan, grated (sub plant-based cheese) 

TOPPINGS

½ cup sharp cheddar cheese, shredded (sub plant-based cheese) 
Hot sauce

PROCESS

Preheat Oven to 350°. Combine all ingredients in a large mixing bowl and combine well. Spray a 9x12 baking dish with nonstick spray. Spread mixture into prepared pan, top with remaining cheese (sub plant-based alternative), and bake 30 minutes. Turn oven to broil to brown top if not crispy. Eat alone or over grain or simple salad.
