Clean Beefy Taco Stack


I haven’t made a clean casserole in ages and you guys always ask for dishes that keep well and can be frozen for later in the week - this is what i came up with! JF Clean Beefy Taco Stack, really delicious, easy, and so good paired with my JF Simple Lime Summer Slaw. Serves 4. 


1 Tbsp olive oil
2 garlic cloves, minced
1 cup white onion, diced fine 
2 (10oz) bags organic riced cauliflower
2 Tbsp double concentrated tomato paste (I like Mutti)
2lbs 80/20 grassfed ground beef
JF Universa Salt
10 turns of fresh cracked black pepper
2 grain-free burrito tortillas, toasted and edges trimmed (I like Siete)
Plant-based colby jack, shredded (I like Violife)
Red onion, diced

JF Taco Seasoning:
2 tsp cumin
2 tsp garlic powder
2 tsp oregano
2 tsp chili powder
2 tsp onion powder


JF Simple Lime Summer Slaw:
4 cups green cabbage, cored and sliced thin on the mandolin 
½ cup white or red onion, sliced thin on the mandolin 
½ red bell pepper, sliced thin on the mandolin 
½ persian cucumber, sliced thin on the mandolin 
½ cup carrots, peeled and sliced thin on the mandolin 
1 small jalapeño, deseeded and sliced thin on the mandolin 
JF Simple Mustard Vinaigrette, to taste 


In a large sauté pan warm the olive oil, garlic, and onion. As this softens and turns translucent, add your riced cauliflower. Work in one tablespoon of the double concentrated tomato paste and half of my JF Taco Seasoning, reserve the remaining to season our ground beef. Combine well. 

Layer in the meat, allowing it to crumble and slightly break down as you work it in. Season with JF Universal Salt, fresh cracked black pepper, the remaining  JF Taco Seasoning, and one tablespoon concentrated tomato paste. Remove from heat once the meat is cooked through and cauliflower slightly crisp.

In a casserole dish layer our ground beef-cauliflower mix as the base, top with plant-based colby jack, raw red onion, and a toasted, grain-free tortilla. Repeat - yielding 3 layers of meat and 2 tortillas when finished. 

At this point, either cool completely and freeze, or bake for 30 minutes at 350º.

Toss together all veg to compose your slaw. Dress in my JF Simple Mustard Vinaigrette before serving.
