CAULIFLOWER FRIED RICE
A super easy, super yummy cauliflower fried rice. Totally teen-approved and completely clean. Serves 2 as a meal with your choice of protein; shrimp is my favorite!
2 Tbsp olive oil
4 green onions, chopped
1 garlic clove, chopped
1 (24oz) bag cauliflower rice
JF Spicy Salt, to taste
10 turns of fresh cracked black pepper
1 Tbsp coconut aminos
2 eggs, beaten
Green onion, sliced
Chili sesame oil (I like Trader Joe’s)
In a large pan begin to warm the olive oil, green onion, and garlic, allowing these to soften and become translucent over the heat. Add in the cauliflower rice, incorporate well and raise the heat to medium/medium-high. Don’t rush the cooking process here, let this become crisp and slightly brown. Season with JF Spicy Salt and fresh cracked black pepper. Pour in your coconut aminos; combine throughout. Pour in both eggs, let them cook over the heat, and combine throughout.
Serve warm topped with additional green onion, sesame seeds, and chili sesame oil. Enjoy!
