BUFFALO CAULIFLOWER VINAIGRETTE SALAD

BUFFALO CAULIFLOWER VINAIGRETTE SALAD

A fast and clean lunch or dinner alternative. Serves 1. 

INGREDIENTS:

2 small heads of organic romaine lettuce, chopped
3 green onions, sliced on the diagonal 
1 stalk of celery, diced
½ avocado, diced
1 cup olive oil
Cauliflower florets, roasted
JF Mustard Vinaigrette, to taste
Buffalo Sauce, to taste (I like Primal Kitchen)
JF Spicy Salt, to taste
JF Universal Salt, to taste

PROCESS:

Preheat the oven to 375º. Finely chop organic Romaine lettuce and green onion. Dice celery and slice avocado into small pieces. Toss the cauliflower florets  in olive oil and JF Universal Salt, roast for approximately 30-40 minutes. Combine all ingredients into a small bowl. Add JF Mustard Vinaigrette and a generous drizzle of buffalo sauce. Mix throughly and finish with a pinch of JF Spicy Salt to taste.
