The JF Walking Taco

THE JF WALKING TACO

My take on walking tacos. So delicious and versatile - loved by the whole family! Take a single serve bag of your favorite chips..cut off the side and load it up with your favorites! Serves 4-6, with leftovers. 

INGREDIENTS:

Single-serve bag of grain-free tortilla chips, sliced lengthwise (I like Siete)
JF Taco Night Beef
JF Chili Cauliflower Rice 

 

Taco Night Beef:
Olive oil
1 small white onion, finely diced
2 small garlic cloves, diced 
2lbs grass-fed, 80/20 ground beef
½ tsp oregano 
½ tsp garlic powder 
½ tsp cumin 
1 Tbsp chili powder
A pinch of red pepper flakes
3 Tbsp green chiles (I like Trader Joe’s)
2 tsp double concentrated tomato paste

TOPPINGS:

Green chiles
Radish, chopped
Red onion, chopped
Avocado, chopped
Cilantro, coarsely chopped
Vegan feta, crumbled (I like Trader Joe's)
Hot sauce (I like Tia Lupita)
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste

PROCESS:

Taco Night Beef
In a large pan begin to warm the olive oil. Add in your diced white onion allowing it to become fragrant and tender over the heat. Add the garlic on a medium-low temp, softening it just enough to melt into the meat. 


Add the ground beef. Season with oregano, garlic powder, cumin, chili powder, red pepper flakes, and green chiles. Combine well throughout. Allow this to cook down and slightly crisp over the heat, draining the fat as needed. Work in your double concentrated tomato paste and then let this sit and gently caramelize as it browns. Set aside to cool. 

The JF Walking Taco
Using you single-serve grain-free tortilla chips (sliced open lengthwise) as a base, build upwards with our 
Taco Night Beef and JF Chili Cauliflower Rice - this will soften the chips slightly. Top with green chiles, radish, red onion, avocado, cilantro, vegan feta, hot sauce, and any of your favorites. Finish with a touch of JF Simple Mustard Vinaigrette and JF Spicy Salt. Enjoy!
