Veggie Curry With Cauliflower Rice And Grain Free Garlic Naan

VEGGIE CURRY WITH CAULIFLOWER RICE AND GRAIN FREE GARLIC NAAN

This curry sweet potato soup with cauliflower rice and paleo garlic naan is the perfect winter lunch for when I’m craving something warm and cozy.

INGREDIENTS:

Soup:

 

1 tbs of chopped garlic
1 C of onion
1 C of carrots
2-3 C of purple Japanese sweet potato
1 C of green peas
1 1/2 tsp of freshly grated ginger
2 cans of organic coconut cream
3 C of vegetable stock
2 tbs of curry powder
1 1/2 tsp of JF Curry Salt
1 tbs of freshly squeezed lemon juice
1/2 tsp of turmeric
2 tbs of olive oil
Black pepper
1 tsp of chopped lemongrass (optional)
3/4 C of arrowroot starch (optional)

 

Paleo Garlic Naan:

 

3/4 C arrowroot starch flour
3 tbs of coconut flour
1 egg
1 C full fat coconut milk

 

 Cauliflower Rice Base:

 

12 oz bag of frozen cauliflower rice
1/4 of white onion
1 garlic clove
1 tbs of olive oil

 

TOPPINGS:

Cilantro
JF Spicy Salt

PROCESS:

Soup:

 

Sauté the onion, garlic, and lemongrass in a pan with olive oil. Add to slow cooker* or pot if cooking on a stove. Include the carrots, potatoes, peas, and ginger. Add in coconut cream, vegetable broth, and lemon juice. Season with curry powder, JF Curry Salt, black pepper, and turmeric. Stir well to evenly spread. Cook on low heat for 3-4 hours. Make sure to check on soup and add in arrowroot starch if the consistency needs to be thicker.

 

*Don't have a slow cooker? Simmer over stovetop on low for 4 hours instead.

 

Paleo Garlic Naan:

 

Whisk the arrowroot flour, coconut flour, egg, and coconut milk in a bowl and let mixture thicken for 10 minutes. Add olive oil to pan and scoop about 1/3 C of batter. Sprinkle one side with garlic and cook for 2-3 minutes per side. 

 

Cauliflower Rice Base:

 

In a large pan on medium high heat, sauté the garlic, onion, and cauliflower rice in olive oil and mix everything in evenly. Let sit for a few minutes. I have found that the key to good cauliflower rice is letting it brown and not messing with it too much. Stir occasionally and season with JF Spicy Salt. 

Once the soup is ready, combine everything into a bowl. Add cilantro and a sprinkle of JF Spicy Salt and enjoy!
