Under The Weather Coconut Curry Broth

UNDER THE WEATHER COCONUT CURRY BROTH

A delicious and fast broth for when you're not feeling great.  Include coconut cream and veg for more of a soup feel or opt without for a true broth. Serves 4. 

INGREDIENTS:

1 (32oz) package vegetable broth (I like Kettel & Fire)
1 Tbsp yellow curry paste (I like Mekhala
½ can coconut cream (optional)
Vegetable of choice (optional) 

TOPPINGS:

Fresh cilantro, coarsely chopped
Fresh lime juice
JF Spicy Salt 

PROCESS:

In a large pot begin to warm your vegetable broth and yellow curry paste, incorporating well. Add your coconut cream for a thicker base or opt for a thinner broth without. Include your veg of choice, allowing them to slightly soften over the heat. 


Serve warm garnished with cilantro, fresh squeezed lime juice, and JF Spicy Salt. Enjoy!
