I’ve sort of been off the “meat train” for most of this quarantine and wanted something satisfying and meat free, so here it is.
INGREDIENTS1 head cauliflower (I used purple but any color works)
2 Tbsp Ghee oil or any oil of your choice (this makes it not vegetarian so sub of you are)
1 Tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp dried cilantro
1/2 tsp JF Universal or Spicy Salt
PROCESSPreheat oven to 375 on convention roast. If you do not have convection roast on your oven heat to 400
Rinse and dry your cauliflower. Cut into small florets
Add to large mixing bowl and pour 1/2 of the oil over the cauliflower and mix well.
In a small bowl combine all spices and mix well.
Add 1/2 the spice mix into cauliflower and mix very well. Add other 1/2 of oil and mix well then add remaining spice mix and mix well.
Spread evenly on a parchment lined baking sheet and roast until dark brown and crispy.
Remove from oven and serve on warm tortillas (I love Siete Almond Flour that that I char on my gas grill) with my guacamole and crumbled queso fresco, salsa or hot sauce and sour cream.
So freaking good!
