
SLOW COOKED THAI CHICKEN CURRY
This slow cooker chicken curry is easy to make and perfect for a cold snowy evening. Serves 6.
1 can unsweetened coconut milk
2 Tbsp red curry
2 Tbsp brown sugar
½ tsp ground ginger
1 tsp crushed red pepper flakes
4 garlic cloves, minced
1/4 cup peanut butter
½ cup chicken stock
2 tsp JF Spicy Salt
1 tsp garam masala
1 red pepper, finely chopped
Jalapeño,sliced thin on the mandolin
Lemon or lime
Peanuts, finely chopped
