SLOPPY BBQ CHICKEN
Single dinner portion.
INGREDIENTS1/2 cup brown sugar
1/2 cup ketchup
1 tbsp mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon JF Universal Salt
1/2 teaspoon crushed red chili powder flakes
I tbsp Apple Cider vinegar
3 lbs organic chicken breasts
1 white or brown onion, sliced
1 tbsp olive oil or oil if your choice
PROCESSThis is a very mild BBQ sauce and is meant to marinate the chicken and not produce a ton of leftover sauce. It’s just enough to sauce the chicken but you will need the sides to compliment the meat.
Using your slow cooker set it to low for 4-5 hours. If using your instant pot set to chicken and follow the same process.
Coat the pan with oil. Add onion to bottom of pan and then chicken breasts. Pour spice over the chicken and give it a toss to coat evenly. Go do your thing and make some sides.
I recommend my pickled cucumbers and slaw that are on the website. For the slaw use a bit of ranch dressing as the dressing with vinaigrette to get that authentic slaw vibe without the mayonnaise. Also hot peppers and pickles are amazing with this, as is American cheese.
I served my “sloppy chicken” sandwiches on O’Doughs Vegan sandwich buns but you can use any brand or style.
Give the chicken a toss about 1/2 hours into cooking.
Once the time is up in the chicken, use a fork to shred the chicken in the pot and serve from there or plate all and create a buffet for the family to build their own.
Serve with good potato chips.
Tip: Don’t try on spring bathing suits after eating.
