SLOPPY BBQ CHICKEN
½ cup brown sugar (sub brown coconut sugar)
½ cup ketchup
1 Tbsp mustard
½ tsp garlic powder
½ tsp onion powder
1 tsp JF Universal Salt
½ tsp crushed red chili powder flakes
1 Tbsp apple cider vinegar
3lb organic chicken breast
1 white or brown onion, sliced
1 Tbsp olive oil
Sandwich buns (sub grain-free sandwich buns)
American cheese (optional; sub plant-based cheese)
Hot peppers (optional)
Set your slow cooker to low for 4-5 hours. If using your instant pot set to chicken and follow the same process.
Coat the pan with oil. Add the onion to bottom of the pan and then add the chicken breasts. Pour the spices over the chicken and give it a toss to coat evenly.
Give the chicken a toss about 30 minutes into cooking. Once the time is up in the chicken, use a fork to shred the chicken in the pot and serve from there or plate all and create a buffet for the family to build their own.
