Simple Baked Chicken Meatballs

I have a thing for meatballs. I love ordering meatballs when I am out to dinner but I am never quite sure what is actually in the ingredients so I decided to give simple meatballs a try. Make them at home to have as a simple protein base for salads. I know meatballs on salad sounds strange but it isn’t once you eat it. 

These are great because they take only one bowl and one baking sheet to make them so not a huge mess.  

INGREDIENTS

1 pound ground chicken or turkey
1 organic egg
1/2 cup breadcrumbs of your choice (I use gluten free)
1/2 cup grated parmesan cheese
2 Tablespoons good olive oil (I use my favorite garlic olive oil)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon JF Salt of your choice (I use JF Universal or JF Spicy)
fresh ground black pepper to taste

 

PROCESS

Preheat oven 400
In a large mixing bowl combine the below. I use my hands to mix it helps to combine the ingredients.
1 pound ground chicken or turkey
1 organic egg
1/2 cup breadcrumbs of your choice (I use gluten free)
1/2 cup grated parmesan cheese
2 Tablespoons good olive oil (I use my favorite garlic olive oil)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon JF Salt of your choice (I use JF Universal or JF Spicy)
Fresh ground black pepper to taste
You can also add extra seasonings of your choice if making these specific. IE Oregano if using for pasta, crushed red chili pepper flakes for some extra heat, curry powder or cumin. Play around with these to create your personalized favorite combo.
Line a baking sheet with foil. Spray foil with organic cooking spray (I use coconut or canola)
Roll the meat mixture into approximately 30 small even balls and line up on baking sheet. 
Bake for approximately 20-30 min
Remove meatballs from the pan immediately after taking out of oven and serve or store in an airtight container. This is a great recipe to double and freeze the meatballs once they are cooled. This way you always have on hand for dinner in a rush just add to my tomato sauce and serve with pasta of your choice and crusty garlic bread. A favorite for my kids.
