Simple Baked Chicken Meatballs

SIMPLE BAKED CHICKEN MEATBALLS

These are great because they only require one bowl and one baking sheet to make. Perfect as a simple protein to add to salads - sounds strange, but so delicious! 

INGREDIENTS

1lb ground chicken (sub turkey)
1 organic egg
½ cup breadcrumbs (sub grain-free crackers, crushed) 
½ cup parmesan cheese, grated (sub plant-based cheese)
2 Tbsp olive oil
½ tsp garlic powder
½ tsp onion powder
½ tsp JF Universal Salt (sub JF Spicy Salt)
Fresh ground black pepper, to taste

PROCESS

Preheat oven 400°.  In a large mixing bowl combine the ground chicken, egg, breadcrumbs, parmesan, olive oil, and all seasonings.Use your hands to combine well. 


Line a baking sheet with foil. Spray foil with organic cooking spray 
Roll the meat mixture into approximately 30 small even balls and place them on a lined, oiled baking sheet. Bake for approximately 20-30 minutes. 

 

Serve immediately or store in an airtight container.
