2 cups cooked quinoa (color of choice)
1 jalapeno deseeded and diced
1/2 red onion, diced
1/2 red pepper, diced
1/2 yellow pepper, diced
3/4 cup of dried cranberries
1/2 Tsp JF Universal Salt
1/4 of fresh squeezed lemon juice
1/3 cup of good quality olive oil. My favorite is Central Coast Family Farm
Combine all fresh ingredients and mix well in a large mixing bowl.
In a small mixing bowl, combine lemon juice, olive oil and JF Universal Salt and whisk.
Pour dressing over quinoa and mix well.
Refrigerate at least one hour before serving.
Season with salt and pepper to taste.
*A great addition is to top with chopped pecans.
