Salad Toast

SALAD TOAST

I made a new version of my toast for lunch today. I wanted it to feel a bit more bitter than usual, and it paired perfectly with my JF Curry Salt! Great as a WFH  lunch or to take on the go and assembled at the office. Serves 1.

INGREDIENTS:

2 pieces grain-free bread, sliced & toasted (I like AWG Bakery Everything Loaf)
Dairy-free cream cheese (I like Violife)
½ avocado, sliced
Purple endive
Red radish, sliced thin on the mandolin 
Watermelon radish, sliced thin on the mandolin & cut into matchsticks 
Cucumber, shaved
Alfalfa sprouts 
Chives, chopped
JF Curry Salt 
JF Simple Mustard Vinaigrette


PROCESS:

Using your toasted bread as the base layer your ingredients on starting with cream cheese and sliced avocado. Build upwards with the purple endive, cucumber, radishes, sprouts, and chives. Use your judgement for measurements. Dress each slice in a spoonful of my JF Simple Mustard Vinaigrette and season with JF Curry Salt. Enjoy!
