Vegan Cashew Caesar


I love to have a big salad before travel days when I know my food is scarce and super snack heavy. This is beyond simple and so good. Serves 1. 


Little gem lettuce
Castelvetrano olives
Vegan parmesan (optional)
Grain-free croutons (optional)
rilled shrimp, or protein of choice (optional)
JF Vegan Cashew Caesar Dressing
Fresh cracked black pepper
JF Spicy Salt 

Vegan Cashew Caesar Dressing:
½ cup cashews, soaked
2 tsp capers
1 Tbsp dijon mustard
1 garlic clove
2 Tbsp nutritional yeast 
½ cup water 
½ tsp JF Spicy Salt 


Vegan Cashew Caesar Dressing
In a small pan over medium heat, bring the cashews to a boil. Reduce to low heat for about 10-15 minutes, until rehydrated and tender. Drain and add them to your blender. Blend all of the ingredients together until smooth. Adjust to reach your desired consistency. 

Vegan Cashew Caesar Salad
Using your little gem lettuce as the base, layer in your olives, vegan parmesan, croutons, and grilled shrimp. Spoon over the dressing and season with fresh cracked black pepper and JF Spicy Salt.
