Rainbow Salad

RAINBOW SALAD

I was in the mood for a salad today and figured I would build one along with you guys. Totally filling and so easy for a midday meal! Serves 1.

INGREDIENTS:

Red butter lettuce, washed and chopped 
¼ cup red, purple, and watermelon radishes, sliced thin on the mandolin 
1 JF Jammy Egg
¼ cup green olives, sliced (I like FreeStyle Snacks)
¼ cup green onion, chopped
¼ cup carrots, chopped
½ avocado, cut into chunks
2 Tbsp raw sunflower seeds
JF Spicy Salt or JF Curry Salt, to taste 
JF Simple Mustard Vinaigrette, to taste

PROCESS:

In a large bowl add the butter lettuce as your base. Stack your sliced radishes vertically and cut thin matchstick slices, quarter them, or leave them whole for variation. Top the lettuce with your radishes, green olives, green onion, carrots,  avocado, sunflower seeds, and the soft-boiled egg. Dress in JF Simple Mustard Vinaigrette and season with JF Spicy Salt or JF Curry Salt. Enjoy!
