PAD THAI NACHOS

PAD THAI NACHOS

I saw these nachos on Netflix and knew I had to recreate them immediately. These are the perfect snack for Sunday football. Serves 4.

INGREDIENTS:

1/2 bag of Cassava Chips from Trader Joes
1/2 C Violife Cheddar Cheese
1 Tbsp sesame oil
2 cloves of garlic, chopped
1 C carrots, julienned
2 C bean sprouts
1 C green onion, chopped on a diagonal
JF Spicy Salt, to taste
1/2 C Base Culture almond butter
2 Tbsp chili paste
1 Tbsp coconut sugar
2 Tbsp coconut aminos
 
Optional Toppings:
Peanuts, chopped
Green onion, chopped
Lime juice, fresh squeezed
Sriracha, to taste

PROCESS:


On a large baking sheet, pour a bag of the Trader Joe’s cassava chips and sprinkle with Violife cheddar cheese. Broil for about 5 minutes until the cheese is melted and almost golden brown. Set to the side. In large pan on medium heat, sauté the garlic cloves in sesame oil until fragrant. Add the carrots, bean sprouts, and green onion. Sauté for 2 minutes and season with JF Spicy Salt. Add the almond butter, chili paste, coconut sugar, and coconut aminos. Sauté for 5-7 minutes and make sure the ingredients form a sauce like texture in the pan. Add additional chili paste and coconut aminos if you wish. Pour the ‘Pad Thai’ on top of the chips. Top with chopped peanuts, green onion, lime juice, and sriracha.
