GRAIN FREE ORANGE CHOCOLATE BISCOTTI
My favorite sweet combo is always orange and chocolate. Given the popularity of the grain free biscotti, I wanted to try my favorite flavor profile as a new version.
3.5 C of blanched almond flour
1 tsp of baking soda
1/2 C of melted vegan butter
3/4 C of coconut sugar
1.5 tsp of vanilla extract
2 tbs of freshly squeezed orange juice
Zest of one orange
3/4 C of chocolate chips
1 tsp of JF Spicy Salt
Combine all ingredients into a large mixing bowl and mix well. Line a baking sheet with parchment paper. Split the batter in 1/2 and mold 2 long biscotti loaves lengthwise on each side of the baking sheet. Bake for 20 minutes at 350° and then reduce the heat to 250° and bake for an additional 20 minutes. Remove from oven and let cool slightly. Slice loaves into biscotti slices and flip on their sides with the interior facing up. Place back into oven and let the biscotti crisp to your liking. The longer you bake the crispier they will be. Remove from oven and let cool once finished baking. Allow to cool completely.
While biscotti is drying out in oven, zest 1/2 of an orange onto parchment paper and place on small baking sheet. Add to bottom rack of oven to dry out. This will be part of the tipping on the dipped chocolate along with JF Spicy Salt. As the orange peel starts to dry, give the parchment a scrape and turn grated rinds over. Shake to even out the drying process. Once mostly dry, remove from oven and allow to further dry while biscotti cools. Once fully dry, place to side as an extra topping. Sprinkle immediately after you dip the biscotti before the salt.
*Option to dipped into melted chocolate:
Melt 1 cup of chocolate chips (I like Hu Gems or Evolved Chips) in microwave until melted. Tip one flat side or one tip of biscotti into melted chocolate. Sprinkle with a pinch JF Spicy Salt over chocolate. Place on wire rack to cool.
