Grain Free Orange Chocolate Biscotti

My favorite sweet combo is always orange and chocolate. Given the popularity of the grain free biscotti, I wanted to try my favorite flavor profile as a new version.

3½ cups blanched almond flour
1 tsp baking soda
2 eggs
½ cup vegan butter, melted
¾ cup coconut sugar
1½ tsp vanilla extract
2 Tbsp orange juice, fresh squeezed

Chocolate Dip:
cup chocolate chips, melted (I like Evolved
JF Spicy Salt
Zest of one orange

Preheat the oven to 325°. Combine all biscotti ingredients into a large mixing bowl and mix well. Line a baking sheet with parchment paper. Split the batter in half and mold 2 long biscotti loaves lengthwise on either side.

Bake for 20 minutes then reduce heat to 250° and bake for an additional 20 minutes. Remove from oven and let cool slightly. Slice into biscotti slices and flip on their sides with the interior facing up. Place back into the oven and let them crisp to your liking. The longer you bake the crispier they will be. Remove from oven and let cool completely.

While biscotti is drying out in the oven, zest half an orange onto parchment paper and place on a small baking sheet. Add to the bottom rack of your oven to dry out. Halfway through give the parchment a scrape and turn grated rinds over. Shake to even out the drying process. Once mostly dry, remove from the oven and set aside.

Chocolate Dip
Melt your chocolate chips. Tip one flat side or one tip of biscotti into the melted chocolate. Immediately sprinkle with the dried orange zest and a pinch of JF Spicy Salt. Place on wire rack to cool. Enjoy!
