NIÇOISE SALAD

NIÇOISE SALAD

After watching my friends indulge in French fries during our vacation, I was craving roasted potatoes. They pair nicely with a Niçoise Salad. Serves 1.

INGREDIENTS:

Simple Roasted Potatoes:
1 bag of purple, red, and new potatoes, quartered
1 Tbsp rosemary
1 shallot, minced
¼ cup olive oil
Fresh cracked black pepper, to taste
JF Spicy Salt, to taste

Niçoise Salad:
1 cup red oak lettuce, chopped
1 cup green oak lettuce, chopped
½ can of tuna, drained and flaked
¼ cup red onion, thinly sliced
¼ cup green beans, blanched
¼ cup briny olives
¼ cup JF Simple Roasted Potatoes
¼ cup cucumbers, chopped
¼ cup tomatoes, chopped
½ shallot, chopped
jammy egg
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste

PROCESS:

Simple Roasted Potatoes
Preheat the oven to 400º. In a large bowl, combine the quartered potatoes with the rosemary, shallot, JF Spicy Salt, and fresh cracked black pepper. Pour the olive oil the potatoes. Mix well until everything is combined. Pour these onto a parchment lined baking sheet and convection roast for 30 minutes.
