NIÇOISE SALAD

NIÇOISE SALAD

After watching my friends indulge in French fries during our vacation, I was craving roasted potatoes. They pair nicely with a Niçoise Salad. Serves 1.

INGREDIENTS:

Simple Roasted Potatoes:
1 bag of purple, red, and new potatoes, cut into quarters
1 Tbsp rosemary
1 shallot, minced
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
1/4 C olive oil
 
Niçoise Salad:
1 C red oak lettuce, chopped
1 C green oak lettuce, chopped
1/2 can of tuna, drained
1/4 C red onion, thinly sliced
1/4 C green beans, blanched
1/4 C briny olives
1/4 C JF Simple Roasted Potatoes
1/4 C cucumbers, chopped
1/4 C tomatoes, chopped
1/2 shallot, chopped
1 egg, soft boiled
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste

PROCESS:

Simple Roasted Potatoes:
In a large bowl, combine the quartered potatoes with the rosemary, shallot, JF Spicy Salt, and fresh cracked black pepper. Pour the olive oil the potatoes. Mix well until everything is combined. Pour these onto a parchment lined baking sheet and convection roast for 30 minutes at 400º.
 
Niçoise Salad:
In a large salad bowl, place the chopped green and red oak lettuce. Add the canned tuna, red onion, blanched green beans, briny olives, JF Simple Roasted Potatoes, cucumbers, tomatoes, shallot, and soft-boiled egg. Season with JF Spicy Salt and fresh cracked black pepper. Dress the salad with JF Simple Mustard Vinaigrette.
