Taco Tuesday Slaw


Every time I make tacos there’s always a slaw to pair. This one’s delicious, the vegan feta really mimics a salty Cojita and the fresh lime brings it all together. Serves 4 as a taco topping or as a base for protein.


½ head green cabbage, sliced thin on the mandoline
½ cup red onion, sliced thin on the mandoline
1 persian cucumbers, sliced thin on the mandoline
2 radishes, sliced thin on the mandoline
¾ cup vegan feta, crumbled (I like Trader Joe’s
1 avocado, chopped
Cilantro, coarsely chopped
JF Simple Mustard Vinaigrette, to taste
A squeeze of fresh lime
JF Spicy Salt, to taste


In a large bowl, using the shredded cabbage as a base, begin to build your slaw. Layer in the red onion, cucumber, radish, vegan feta, avocado, and cilantro. Finish with my JF Simple Mustard Vinaigrettea squeeze of fresh lime juice, and JF Spicy Salt. Enjoy!
