MOROCCAN INSPIRED CAULIFLOWER RICE
This dish was inspired by the vibrant colors and spices used in Street Food, which is one of my favorite shows on Netflix. Serves 4.
2 (10 oz) bags of organic cauliflower rice
1/4 C slivered almonds
1/4 C golden raisins
4 Tbsp Ghee
2 cloves of garlic, diced
1 small shallot, diced
1/2 tsp coriander
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp smoke paprika
1/2 tsp of JF Spicy Salt
1/8 tsp of cracked black pepper
Handful of cilantro, chopped
Juice of half a lime
PROCESSIn a medium bowl, mix together the coriander, turmeric, cumin, cinnamon, ginger, and smoked paprika. Set your spice blend to the side.
In a skillet, heat 4 Tbsp Ghee. Add the diced garlic and shallots and cook on medium low stirring occasionally for 3 minutes.
Add the spice mixture to the saucepan. Mix in until the spices become aromatic about 1 minute.
Add the cauliflower rice to the saucepan. Turn the heat up to medium to combine and let the cauliflower cook down a bit. Add JF Spicy Salt and fresh cracked black pepper. Cook for 10 minutes allowing the cauliflower to crisp a little.
While still in the pan, add almonds, golden raisins, chopped cilantro, and lime juice.
This is great as a side dish but can become a whole meal with a fried egg on top.
