One of my favorite meals is a giant Wedge Salad…and a Martini.. And I despise mayo
But restaurant versions are normally covered in heavy mayo dressing and fried onions. I prefer a lighter take on the traditional and actually thing red red onion is better then the fried version.
So here is the dressing I like to make at home. Store bought Blue Cheese dressing is normally a let down so I worked this one out.
3/4 Cup Plain Greek Yogurt (I use 2% but you can use non fat as well)
1/2- 1 Cup of your favorite blue cheese
1/4 cup Buttermilk
1 Tablespoon White Vinegar
1-2 Teaspoons garlic powder
JF Universal or Spicy Salt to Taste
Stir Together All Ingredients. Place in an airtight container till chilled…this gets better after a couple of days FYI..
Serve over salad of your choice….its is also amazing with fresh tomatoes and avocados…
