Make Your Own Chickpea Crunchies

MAKE YOUR OWN CHICKPEA CRUNCHIES

I've tried multiple packaged organic chickpea snacks only to find that are too salty or funky tasting. So the other night when I was pressed for time and wanted something savory so I threw these crunchies together and they were amazing. Use them as an addition to salads or as a snack. Serves 2 as a generous salad topping. Store leftovers in air tight container

INGREDIENTS

1 can organic garbanzo beans, rinsed and dried well
½ white onion, diced fine (sub scallion, chives or red onion)
1 tsp dried or fresh thyme
1 tsp JF Spicy Salt
1 Tbsp olive oil 

PROCESS

Preheat oven to 400°. Line half flat sheet pan with parchment paper. Spread garbanzo beans and onion on paper, drizzle with olive oil and thyme and JF Spicy Salt. Toss well with hands to coat.


Place in oven and roast approximately 30 minutes until browned and crispy. Let cool on tray and toss into salad, cauliflower rice or as a topping for any roasted vegetable. Take the rest to work for a snack!
