Serves 2 as a generous salad topping. Store leftovers in air tight container
INGREDIENTS1 can/ box organic garbanzo beans, rinse and pat dry to remove all moisture
1/2 white onion, diced fine (can substitute with scallion, chives or red onion)
1 teaspoon dried or fresh thyme
1 teaspoon JF Spicy Sal
1 tablespoon olive oil (I like to use a garlic flavored oil)
PROCESSPreheat oven to 400
Line 1/2 flat sheet pan with parchment paper
Spread garbanzo beans and onion on paper, drizzle with olive oil and thyme and salt. Toss well with hands to coat all bean
Place in oven and roast approximately 30 minutes until browned and crispy.
Cool on tray and toss into salad, cauliflower rice or as a topping for any roasted vegetable!
