Keto Taco Pie

I wanted to try something that felt hearty and comforting without the carbs (trying to stay strong on my Keto diet). This crust is composed mainly of coconut flour and you can definitely taste it. I added some of the extra spices from the meat to the pie crust to help give it more flavor. This recipe definitely satisfies the hearty casserole vibe.
 
ingredients
1lb Ground Beef or Ground Chicken (if using chicken opt for thigh meat not breast)
1 yellow onion diced
2 garlic cloves, minced
1 Tbs Chili Powder 
1/2 tsp Paprika
1 tsp ground cumin
1 cup shredded cheddar cheese 
1 green bell pepper diced
2 cups romaine lettuce (very lightly dressed in a simple vinaigrette -see my recipe)
2 green onions sliced thin
1/2 cup pico de gallo (see my recipe on website) 
1/2 cup guacamole (see my recipe on website) 
1/2 cup sour cream
hot sauce of our choice 
2 tbs canola oil
JF Universal or JF Spicy Salt to season meat to taste with fresh cracked black pepper 
 
 
Crust Ingredients
1 cup Almond Flour
1/2 Cup Coconut Flour 
2 Tbs Tapioca Starch 
1/2 cup coconut oil 
1 egg beaten
1 tsp JF Universal Salt Or JF Spicy Salt
1/2 tsp Cumin 
1/4 tsp Chili Powder
1/4 tsp Paprika
 
Process
Preheat oven 375
Place Almond Flour, Coconut Flour and Tapioca Starch in a large mixing bowl and combine. Add coconut Oil, egg and spices and mix till it can form a ball.
Place the dough into a 9” pie dish and press all the dough to the edges and up the side trying to press evenly so not too thick in corners. You want an even crust that isn’t to thick anywhere and you want it to run all the way up the side of the pie dish.
Poke holes in the bottom of the crust with a fork and bake for 12-15 min
While that is baking cook your meat mixture… 
In a medium skillet with your canola oil cook your onion, garlic, jalapeño and bell pepper on medium till softened add ground meat and spices and brown (approximately 10 minutes)
Once crust is removed from the oven - line the bottom of the crust with approximately 1/ cup of the shredded cheddar cheese then the meat mixture then another 1/2 cup of the cheese and bake for another 12-15 minutes till the crust is golden brown and the cheese is melted.
Serve immediately topped with the dressed lettuce, green onion salsa, guacamole and sour cream and hot sauce
