The “Fall Favorite” Salad

THE “FALL FAVORITE” SALAD

I’m calling this one The “Fall Favorite” Salad. I served this at holiday dinner tonight as a side and it had everything you want in a hearty crunchy sweet and savory salad..and it’s filled with apples, perfect for the new year. 

INGREDIENTS:

Romaine, chopped
Arugula
Vegan feta, crumbled (I like Trader Joe’s)
Cucumber, sliced thin on the mandoline 
Carrots, sliced thin on the mandoline 
Apples, chopped
Red onion, chopped
Avocado, chopped
Dates, pitted and chopped
Pecans, chopped
JF “The Easiest Pan Roasted Brussels Sprouts,” chopped
JF “All You Need Is JF Salt Chicken,” chopped (sub JF “Mom’s Not Lazy, Lazy Chicken,” chopped)
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste

PROCESS:

In a large bowl, using the chopped romaine and arugula as a base, begin to build your salad. Layer in the crumbled vegan feta, cucumber, carrots, apples, red onion, avocado, dates, pecans, and JF “The Easiest Pan Roasted Brussels Sprouts.” Top with JF “All You Need Is JF Salt Chicken,” and toss in JF Simple Mustard Vinaigrette. Finish with JF Spicy Salt. Enjoy!
