Simple Spinach and Green Frittata

SIMPLE SPINACH AND GREEN FRITTATA

My simple spinach and green onion frittata is the perfect breakfast to make for when you want to get your greens in. 

INGREDIENTS:

3 organic eggs
2 organic egg whites
1 1/2 C of baby spinach
2 organic green onions, chopped 
1 tbs of chives
Fresh cracked black pepper
JF Spicy Salt to taste

 

For toppings:

 

Crumbled vegan Parmesan (I love the Trader Joe's version)
Drizzle of olive oil

PROCESS:

Preheat oven to 350 °F. Whisk the eggs and egg whites together in a mixing bowl. Add the baby spinach into a pan with olive oil. Once spinach has wilted, add the green onion and chives. Pour the eggs into the pan and sprinkle JF Spicy Salt. Put the pan into the oven and take out once the everything has set. Crumble vegan Parmesan and chives on top and serve.
