Give yourself time to prep this in the AM and let the chicken marinate all day. This is the best on a Mediterranean salad. Serves 4.
2lb organic chicken breasts, butterflied
1 cup greek yogurt (sub plain coconut yogurt)
1 lemon, zested & juiced
2 Tbsp dried oregano
4-5 cloves of garlic, mincedJF Spicy Salt or JF Universal Salt, to taste
Drizzle of olive oil
In a large bowl combine chicken, yogurt, lemon zest, juice of 1 lemon, oregano and a nice sprinkle of JF Spicy Salt or JF Universal Salt, to taste
. Mix well to combine and place in an airtight storage container or bag to store in fridge all day. Let marinate for at least 2 hours. When ready to grill heat up the grill pan or a large frying pan to medium with some olive oil. I like to cook on my flat top cast iron grill for a nice char. Cook until golden brown and crispy. At the end of cooking add some lemon wedges to the grill and char them. Serve immediately with rice, salad or potatoes.
