GREEK CHICKEN

Give yourself time to prep this in the AM and let the chicken marinate all day. This is the best on a Mediterranean salad. Serves 4. 

INGREDIENTS:

2lb organic chicken breasts, butterflied
1 cup greek yogurt (sub plain coconut yogurt)
1 lemon, zested & juiced
2 Tbsp dried oregano
4-5 cloves of garlic, minced
JF Spicy Salt or JF Universal Salt, to taste
Drizzle of olive oil

PROCESS:

In a large bowl combine chicken, yogurt, lemon zest, juice of 1 lemon, oregano and a nice sprinkle of JF Spicy Salt or JF Universal Salt, to taste. Mix well to combine and place in an airtight storage container or bag to store in fridge all day. Let marinate for at least 2 hours. When ready to grill heat up the grill pan or a large frying pan to medium with some olive oil. I like to cook on my flat top cast iron grill for a nice char.  Cook until golden brown and crispy. At the end of cooking add some lemon wedges to the grill and char them.  Serve immediately with rice, salad or potatoes.
