GRAIN FREE "NO CORN" CORN BREAD
This grain free “no corn” corn bread is the perfect snack or side dish when I’m in the mood for something savory.
3 eggs at room temperature
1/2 C of full fat coconut milk or cream at room temperature
1/4 C of raw honey
1/2 C of coconut sugar
1/3 C of melted dairy free butter (I like Miyokos)
2 tsp of fresh lemon juice
1 ¾ C of blanched almond flour
1/4 C of arrowroot flour
2 tbs of coconut flour
1 ½ tsp of baking powder
1/2 tsp of baking soda
1/2 tsp of JF Spicy Salt
For a less “sweet” version sub maple sugar for coconut sugar.
Preheat oven to 325° F and line a pan with parchment paper. Whisk together the eggs, coconut milk, lemon juice, honey, coconut sugar, and butter in a bowl. In a separate bowl, combine the almond flour, arrowroot, coconut flour, baking powder, baking soda and spicy salt. Add the dry mixture into the wet ingredient bowl and stir until combined. Transfer the batter to the pan. Bake in the oven for 25-30 minutes. Let bread cool and then enjoy!
