GRAIN FREE CHOCOLATE BISCOTTI
The benefit of working from home is experimenting with my existing recipes. After making my own Grain Free Biscotti I decided to make a rich, chocolate version.
3 1/2 C of blanched almond flour
3 tbsp organic unsweetened cocoa powder
1 tsp of baking soda
1 tbsp of cinnamon
1 tsp of JF Spicy Salt
1 1/4 C of coconut sugar
1/2 C of vegan butter, melted
1/2 -1 C of Hu chocolate chunks
2 tsp of vanilla extract
Preheat oven to 325º. Combine ingredients into a large bowl (I like to use my Swirl Serving Bowl from CB2). Stir and fold ingredients throughly. Mix in chocolate chips. Place a tiny bit of almond flour on countertop and begin to form long biscotti sticks. Once formed, place on a baking tray lined with parchment paper. Bake in oven for 20 minutes. Remove from oven and let cool for 5 minutes. After 5 minutes, use a serrated knife to slice biscotti into pieces. Put back in oven at 250º to dry out. For an extra crunch, bake 10 minutes longer.
*Remove or reduce cinnamon if you don't want any spice to these
