On days when I am busy in back to back meetings and calls, I like to create a fresh, filling salad with ingredients on hand. Serves 1.


2 cups arugula
½ cup beets, chopped
½ orange, peeled and sliced
½ avocado, diced
¼ red onion, chopped
3 radishes, chopped
¼ cup fresh cilantro, chopped
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste

JF Spa Tuna:
2 (8oz) cans of organic low sodium, white meat tuna
3 Tbsp good dijon mustard 
2-3 fresh jalapeños, deseeded and diced fine
3-5 piquillo peppers, diced fine
½ red onion, diced fine
1 can organic white beans
3 Tbsp JF Simple Mustard Vinaigrette
JF Universal Salt, to taste
Fresh cracked black pepper 
Cilantro, chopped fine


JF Spa Tuna
Drain the tuna. Using the back of a fork flake the tuna in a bowl until fine. Coat the tuna with my JF Simple Mustard Vinaigrette. Season with JF Universal Salt and pepper to taste. Add Dijon mustard and mix well. Add an even amount of jalapeños, piquillo and red onion for color and flavor. Add beans and mash about a quarter of them keeping the rest whole. Finish with cilantro.


Fast, Working Lunch Salad
In a large salad bowl, place the arugula. Top with beets, orange slices, avocado, red onion, radishes, and fresh cilantro. Dress the salad in my JF Simple Mustard Vinaigrette and season with JF Spicy Salt and fresh cracked black pepper. Top the with my JF Spa Tuna, and enjoy!
