3-4 filets of white fish (I used flounder but you can use tilapia or sea bass as well)
6-7 green onions, sliced thin
2 cloves garlic chopped fine
Fresh cracked black pepper
JF Spicy Salt
1 tablespoon olive oil
1 tablespoon unsalted butter
Season fish in butcher paper with JF Spicy Salt and black pepper.
In a large sauté pan heat oil and butter on medium. Once hot add garlic and green onion and sauté till softened (do not burn!!)
Add fish on top of the green onion. Cook 1-2 minutes then flip once you see the sides start to whiten. When you flip try to catch all the green onion and garlic so it’s on the top when you turn it. Baste top with butter and oil using a spoon.
Cook another 2 minutes
Plate over rice and serve immediately with a lemon wedge and extra salt and pepper.
