“DON’T EVER MAKE MASHED POTATOES AGAIN, MAKE THESE”

This parmesan, garlic mashed cauliflower is the perfect substitute for mashed potatoes. These are Keto Kev approved and will surely become a staple in my house. Serves 4.

INGREDIENTS:

2 heads of cauliflower, roughly chopped
2 garlic cloves, chopped
Olive oil
½ cup parmesan cheese, freshly grated (sub plant-based cheese)
2½ Tbsp cream cheese (sub vegan cream cheese)
¼ tsp fresh cracked black pepper
1 tsp JF Spicy Salt

PROCESS:

In a small saucepan, sauté the garlic in olive oil for 1-2 minutes. Steam the cauliflower florets and place in a food processor. Pour the garlic in the food processor. Add the plant-based parmesan and vegan cream cheese. Season with fresh cracked black pepper and JF Spicy Salt. Pulse in the food processor until you reach your desired consistency. Add seasoning as needed. These are the perfect side for my JF The Kid’s Favorite JF Salt and Pepper Pork Ribs.
