1/2 cup butter
1 cup organic sugar
2 large organic eggs
1/2 cup orange juice
3 tablespoons orange zest
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon Salt
1 cup mini semi sweet chocolate chips
ORANGE ICING GLAZE
1 1/4 cups sugar
1/4 cup orange juice
1 teaspoon orange zest
1 teaspoon salted melted butter
Preheat the oven to 350 degrees.
Grease a standard loaf pan
In a large mixing bowl, beat together the butter and sugar until the consistency is smooth and creamy. Beat in the eggs until fully combined. Add in the orange zest and juice and mix until combined evenly.
In a separate bowl, whisk together flour, baking powder and salt. Then, add into the butter mixture and stir until mixed well.
Transfer the mix into prepared loaf pan, smoothing out the top
While the loaf is baking, combine the ingredients for the orange icing glaze in a large Pyrex measuring cup
Add in the butter and whisk until smooth. If it is not pourable, you can heat in the microwave for 30 seconds or so.
Let the mixture sit until the loaf is done baking and cools off
Bake for 55-60 minutes or until toothpick comes out of the center clean
Remove from the oven and let the cake cool
Add the orange icing glaze once fully cooled off
