INGREDIENTS:Burst Cherry Tomato Sauce:
2 Tbsp olive oil
¼ white onion, thinly sliced
1 clove of garlic, minced
1 container of cherry tomatoes
¼ cup olive oil
2 filets of wild caught cod
JF Spicy Salt, to taste
Onion Powder, to taste
PROCESS:Burst Cherry Tomato Sauce
In a large saucepan on medium high heat, warm the olive oil. Add the white onion and garlic and sauté for 2-3 minutes until fragrant. Add the cherry tomatoes. Sauté until they ‘burst’ and then stir to create a simple tomato sauce.
In a large pan on medium high heat, pour the olive oil. Place the fish in the pan and sprinkle with JF Spicy Salt and onion powder to taste. Cook on each side for about 2-3 minutes. Serve with the tomato sauce.
