If your kids won’t eat plain broccoli this cheesy broccoli rice bake is your answer. It is also a perfect carb-free, keto friendly side with protein or as a warm vegetarian dream meal. Serves 6. 


Broccoli Rice:
3 heads of broccoli, finely chopped or pulsed in the food processed
2 Tbsp butter (sub ghee or vegan butter)
2 Tbsp olive oil
2 cloves of garlic, finely minced
4 Tbsp shallot, finely minced
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
Cheesy Cream Sauce:
4oz cream cheese (sub vegan cream cheese)
¼ cup half and half (sub almond milk)
1 tsp mustard
Fresh cracked black pepper
6 slices of cheddar cheese, cubed (sub plant-based cheese)



Broccoli Rice
In a large pan, heat the butter and olive oil. Add the garlic and shallot and sauté until fragrant about 1 minute. Add the ‘riced’ broccoli and cook on medium. Season with JF Spicy Salt and fresh cracked black pepper. Let it sauté being careful not to overcook it. It will turn into ‘mush’ if it gets overcooked. You can stop here and serve this broccoli rice as is or create the cheesy broccoli rice bake by following the additional steps below.
Cheesy Cream Sauce
In a small saucepan, combine the cream cheese, half and half, and mustard. Mix it together on medium heat until it is combined. Season with a lot of fresh cracked black pepper. Place the broccoli rice in a casserole dish and pour this sauce all over. Top with cheddar cheese cut into cubes and broil for 5 minutes. It is done when the top is golden brown.
