When my office was in Soho my team and I would always order avocado toast from Café Gitane. It was so good, so I knew I had to recreate it on my new healthy eating plan. Serves 1.


2 eggs
¼ cup vegan mozzarella cheese (I like Violife)
½ tsp garlic powder
½ tsp onion powder
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
Avocado oil
½ avocado
½ lemon, juiced
Crushed red chili pepper flakes, to taste


Beat together the two eggs. Add the vegan mozzarella cheese. Season with garlic powder, onion powder, JF Spicy Salt, and fresh cracked black pepper. Mix well. Drizzle some avocado oil in the waffle maker. Pour this into a preheated waffle maker and cook. While the chaffle cooks, combine the avocado, lemon juice, crushed red chili pepper flakes and JF Spicy Salt to taste. Mash together. Once the chaffle is cooked let cool for 1-2 minutes. Serve the avocado mash on top of the chaffle and enjoy.
