Cauliflower Rice

Cauliflower rice my favorite alternative to a starchy side and is just as filling. It's gluten free and paleo. With such a simple base you can easily vary the options and flavors each time.

INGREDIENTS

1 head organic cauliflower, cut into florets
2 bunches of green onion, chopped fine
½ red bell pepper, diced fine
Handful chives, chopped
4 Tbsp garlic olive oil
JF Universal Salt to taste

PROCESS

Step 1: Cut cauliflower into small florets. Pulse it in a food processor stopping to mix every few seconds till it reaches the consistency of couscous, for a coarser texture you can use a hand grater, both are good.

Step 2: In a large sauté pan warm 2 tablespoons of the garlic oil on medium/high till hot. Add the green onion and red pepper and saute till softened and starting to brown. Add the cauliflower and saute on medium/low for approx. 6 minutes stirring constantly. Add the other tablespoon of oil as needed to moisten.

Step 3: Add a nice amount of JF Universal Salt and pepper to season. Stir in chives, reserve some for the top.

Step 4: Serve alone or with a protein of your choice. Try not to eat it all before serving!
