Cauliflower Rice

CAULIFLOWER RICE

Try not to eat it all before serving!

Cauliflower rice my favorite alternative to a starchy side and is just as filling. It's gluten free and paleo. With such a simple base you can easily vary the options and flavors each time.

Ingredients

One head organic cauliflower

2 bunches of green onion chopped fine

1/2 red bell pepper diced fine

4 tablespoons garlic olive oil

Handful chopped chives

JF Universal Salt to taste

Directions

Cut cauliflower into small florets. Pulse it in a food processor stopping to mix every few seconds till it reaches the consistency of couscous, for a coarser texture you can use a hand grater, both are good.

In a large sauté pan warm two tablespoons of the garlic oil on medium/high till hot. Add the scallions and red pepper and saute till softened and starting to brown. Add the cauliflower and saute on medium/low for approx 6 minutes stirring constantly. Add the other tablespoon of oil as needed to moisten.

Add a nice amount of salt and pepper to season. I use JF Salt which has some crushed red pepper for extra spice. Stir in chives and reserve some for the top.

Serve alone or with a protein of your choice. Try not to eat it all before serving!
