Cajun Shrimp Pasta

CAJUN SHRIMP PASTA

This Cajun Shrimp Pasta is perfect to make during the cold winter months when you’re craving something warm and comforting. 

INGREDIENTS:

20-30 small, wild caught shrimp
2 cups cashews, soaked
1 (8oz) box of pasta, cooked according to package (I like Jovial
2 cups baby spinach, chopped
2 garlic cloves, chopped
2 Tbsp olive oil

 

Homemade Cajun Seasoning:
½ tsp smoked paprika
½ tsp oregano
½ tsp thyme
½ tsp garlic powder
½ tsp onion powder
½ tsp JF Spicy Salt
½ tsp black pepper

TOPPINGS:

Chives, chopped
Olive oil
JF Spicy Salt

PROCESS:

Homemade Cajun Seasoning
Mix the smoked paprika, oregano, thyme, garlic powder, onion powder, black pepper, and 
JF Spicy Salt until well combined. 

 

Soak the cashews in water and let them soften for 10-15 minutes over low heat.

 

In a large pan over medium heat, sauté the garlic in olive oil. Transfer the cashews and garlic into a blender and blend until the sauce forms. Add water until you reach your desired thickness.

 

Add some of the cajun seasoning to the shrimp and cook in a pan with olive oil. Mix in more of the cajun seasoning as the shrimp begin to curl. Once cooked through, remove from the heat.

 

Boil the pasta and begin to chop up the baby spinach. Add the cashew sauce to a separate pan and cook over low heat. Mix the rest of the cajun seasoning into the sauce. Add the spinach into the sauce and stir until the spinach cooks down. Rinse the pasta off and mix your sauce in. Place the shrimp on top of the pasta. Season with chives, olive oil, and JF Spicy Salt, then serve.
