I have been loving fresh, crunchy salads with some citrus. The fennel pairs really nicely with Cara Cara oranges, but substitute whatever citrus you have on hand. Serves 1.


Bright Fennel Salad:
½ bulb of fennel, sliced thin on the mandolin
½ avocado, diced
2 cups radicchio, chopped
½ Cara Cara orange, diced
¼ cup red onion, sliced thinly on the mandolin
cup sunflower seeds
Lemon vinaigrette:
1 lemon, juiced
¼ cup olive oil
2 Tbsp Dijon mustard
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste


Bright Fennel Salad:
In a large bowl, place the radicchio as your base. Top with the fennel, avocado, Cara Cara orange, red onion, and sunflower seeds. Dress with the lemon vinaigrette. Season with JF Spicy Salt and fresh cracked black pepper to taste.
Lemon Vinaigrette:
In a small bowl, combine the lemon juice, olive oil, dijon mustard, JF Spicy Salt, and fresh cracked black pepper. Whisk together until combined.
